Pumpkin Oats
These warm pumpkin oats make for the perfect fall breakfast.
Ingredients:
3/4 cup oats
1 cup plant-based milk such as oat milk
1 tbsp pumpkin puree
1 tbsp maple syrup
1 tsp pure vanilla extract
1 tsp cinnamon or pumpkin pie spice
Pinch of salt
Toppings like chopped walnuts, raisins, pumpkin seeds, hemps hearts, etc. (optional)
Instructions:
In a saucepan, combine oats, plant milk, pumpkin puree, maple syrup, vanilla extract, salt and seasonings.
Bring to a boil, reduce heat to simmer and cook over a gentle boil for 3 – 4 minutes.
Remove from heat and let stand for 2 to 3 minutes.
Add your toppings and enjoy!
