Pumpkin Oats

These warm pumpkin oats make for the perfect fall breakfast.

Ingredients:

  • 3/4 cup oats

  • 1 cup plant-based milk such as oat milk

  • 1 tbsp pumpkin puree

  • 1 tbsp maple syrup

  • 1 tsp pure vanilla extract

  • 1 tsp cinnamon or pumpkin pie spice

  • Pinch of salt

  • Toppings like chopped walnuts, raisins, pumpkin seeds, hemps hearts, etc. (optional)

Instructions:

  1. In a saucepan, combine oats, plant milk, pumpkin puree, maple syrup, vanilla extract, salt and seasonings.

  2. Bring to a boil, reduce heat to simmer and cook over a gentle boil for 3 – 4 minutes.

  3. Remove from heat and let stand for 2 to 3 minutes.

  4. Add your toppings and enjoy!
